I found this treasure at Shiroyama's workshop. It is 30 years aged Santoku that was made by Mr Enami who is a master of knife smith in Sakai Osaka. This white #2 steel became harder by aged! My opinion is old knives are alwasys better than today.
*This knife has yet to have a final edge created for it. Please order a Honbazuke (hand sharpening) for an additional $20 if you require it.
